Our Classic Oscietra, or Osetra caviar, is a coveted delicacy sourced from the Russian sturgeon, a majestic species native to the Caspian, Black, and Azov Seas. This remarkable fish can thrive for up to 50 years in its natural habitat, growing to impressive lengths of 7–8 feet and weighing as much as 250 pounds. The Russian sturgeon is a slow-maturing species, with females taking 9 to 11 years to produce eggs, which significantly contributes to the caviar’s esteemed value.
