In our smokehouse, time-honored craftsmanship is perfected with state-of-the-art precision. But the soul of our product—what truly sets it apart—is our signature recipe, a secret honed over years of pursuit for the sublime.
Unlike conventional smoked salmon reliant on simple salt and oak, we begin the cure with a mineral-rich, sweet salt and a touch of sugar. We then gently smoke our salmon over an exclusive, proprietary blend of three fine woods: oak for body, apple for sweetness, and beech for a clean, smooth finish. This intricate process, combined with an extended, patient curing period, transforms the fish into something transcendent.
