Imperial Oscietra is a premium grade of caviar sourced from the esteemed Russian sturgeon (Acipenser gueldenstaedtii), celebrated for its opulent flavor and distinctive appearance. The “Imperial” designation signifies the highest quality and rarity, primarily based on the roe’s larger size and enchanting lighter colour. Originally found in the Caspian, Black, and Azov seas, this majestic species is now predominantly raised on farms. It is a slow-growing species, requiring at least 11 years to mature and produce the exquisite eggs of Imperial Oscietra.
CHARACTERISTICS
Appearance
Large pearls, generally ranging from 3mm - 3.2mm in diameter. They are larger than the our Classic Oscietra eggs, which typically measure between 2.6 and 2.9mm. Each roe has a firm yet delicate texture, offering a satisfying “pop” and a creamy mouthfeel, flavor profile and rarity.
Colour
The distinguishing feature of Imperial Oscietra is its lighter colour, which includes radiant shades of golden, amber, or light green. The rarest and most valuable Imperial eggs are distinctly light golden in colour.
Taste
This caviar is prized for its rich, creamy, and nutty flavor profile, which often includes notes of hazelnut and a delicate, oceanic finish.
Rarity
Imperial Oscietra is significantly rarer and more expensive than the classic variety. Historically, the prized golden-hued roe was reserved exclusively for the Russian Tsar. Today, only a small percentage of sturgeon produce this lighter-colored roe. The older the sturgeon, the lighter and more golden the eggs tend to be, which also contributes to its higher price.
